Primi (parte1) - First course

Orecchiette alla bolognese

Ingredients:
Minced meat
Tomato pulp
Tomato paste
Salt
Red wine
Celery, carrot, onion
Flour

Process:
Brown celery, carrot and onion, add minced meat and put a bit flour and tomato paste.
Wet all with a bit of red wine. Next add salt and tomato pulp and blend for about 1 hours.




Saffron rice (Risotto allo zafferano)

Ingredients:
Rice
Oil
Butter
Celery, carrot, onion
Water
Saffron

Process:
Toast rice with oil and butter in a pan.
When rice will be brilliant, remove it from burner. For vegetable broth, put in a pot celery, carrot, onion and water. When broth is ready, replace rice on the burner and add broth a little at a time. Repeat this operation every time rice dries and until it is well coocked. Add saffron and blend.




Carbonara

Ingredients:
Oil
Pillow
Pasta
4 eggs
Parmesan
Pecorino cheese
Salt
Ground pepper
Bread crumbs

Process:
In a bowl, beat eggs, add parmesan, pecorino cheese and a bit of ground pepper and blend.
Cook pasta. In a pan put oil and brown pillow. when the pasta is ready, drain and put it in the pan with pillow  and add the mixture with the eggs. Blend and arrange. add a bit of bread crumbs and of pecorino cheese.


Gnocchi alla sorrentina

Ingredients:
Potatoes gnocchi
Celery, carrot, onion
Oil
Salt
Peeled tomatoes
Mozzarella cheese

Process:
For do sauce, brown oil and onion in a pot.
Add peeled tomatoes and blend for about 1 hour and half and regular of salt.
When the sauce is ready, put it in a pan with gnocchi and skip its.
Arrange and decorate with grated mozzarella cheese.
